Description

This cheesy taco casserole is an easy and delicious meal that combines rice, ground beef, and plenty of cheese!


Ingredients

Scale
  • 3 cups cooked rice
  • 1 pound lean ground beef
  • 1 package (1 oz) taco seasoning
  • 1 can (10 oz) diced tomatoes and green chiles, undrained
  • 1 can (8 oz) tomato sauce
  • 1 cup cottage cheese
  • 1 cup sour cream
  • 1½ cups shredded cheddar cheese

Instructions

  1. Preheat oven to 350ºF. Spray a 9×9-inch baking dish with cooking spray.
  2. Brown meat; drain off fat and return to skillet. Add taco seasoning, diced tomatoes and green chiles, and tomato sauce. Stir and simmer for 5 minutes.
  3. Mix together cottage cheese, sour cream, and rice.
  4. Spread rice mixture in bottom of the prepared pan. Top with taco meat sauce. Sprinkle cheese on top of casserole.
  5. Bake uncovered for 20 to 25 minutes.

Notes

  • Feel free to add more vegetables like bell peppers or corn for added flavor.
  • Can be served with tortilla chips or a green salad.
