Description
This cheesy taco casserole is an easy and delicious meal that combines rice, ground beef, and plenty of cheese!
Ingredients

- 3 cups cooked rice
- 1 pound lean ground beef
- 1 package (1 oz) taco seasoning
- 1 can (10 oz) diced tomatoes and green chiles, undrained
- 1 can (8 oz) tomato sauce
- 1 cup cottage cheese
- 1 cup sour cream
- 1½ cups shredded cheddar cheese
Instructions
- Preheat oven to 350ºF. Spray a 9×9-inch baking dish with cooking spray.
- Brown meat; drain off fat and return to skillet. Add taco seasoning, diced tomatoes and green chiles, and tomato sauce. Stir and simmer for 5 minutes.
- Mix together cottage cheese, sour cream, and rice.
- Spread rice mixture in bottom of the prepared pan. Top with taco meat sauce. Sprinkle cheese on top of casserole.
- Bake uncovered for 20 to 25 minutes.
Notes
- Feel free to add more vegetables like bell peppers or corn for added flavor.
- Can be served with tortilla chips or a green salad.
