Description

A delicious and easy crockpot recipe for pineapple chicken that is sweet and savory.


Ingredients

Scale
  • 900g (2 lbs) boneless skinless chicken thighs or breasts
  • 1 cup pineapple juice
  • 1 cup brown sugar
  • 1/2 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for slurry)
  • 1 cup pineapple chunks
  • 1 cup chopped bell peppers (optional)

Instructions

  1. Cut the chicken into bite-sized chunks and place in the crockpot.
  2. In a bowl, whisk together pineapple juice, brown sugar, soy sauce, and minced garlic. Pour over the chicken.
  3. Cover and cook on low for 5–6 hours or on high for 2–3 hours until the chicken is tender.
  4. In the last 30 minutes, mix cornstarch with water, then stir it into the crockpot to thicken the sauce.
  5. Add pineapple chunks and optional chopped bell peppers during the last 30 minutes of cooking.
  6. Serve hot over rice or noodles and enjoy!
