A delicious and easy crockpot recipe for pineapple chicken that is sweet and savory.
Ingredients

- 900g (2 lbs) boneless skinless chicken thighs or breasts
- 1 cup pineapple juice
- 1 cup brown sugar
- 1/2 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 2 tablespoons water (for slurry)
- 1 cup pineapple chunks
- 1 cup chopped bell peppers (optional)
Instructions
- Cut the chicken into bite-sized chunks and place in the crockpot.
- In a bowl, whisk together pineapple juice, brown sugar, soy sauce, and minced garlic. Pour over the chicken.
- Cover and cook on low for 5–6 hours or on high for 2–3 hours until the chicken is tender.
- In the last 30 minutes, mix cornstarch with water, then stir it into the crockpot to thicken the sauce.
- Add pineapple chunks and optional chopped bell peppers during the last 30 minutes of cooking.
- Serve hot over rice or noodles and enjoy!

- This dish can be served with rice or noodles for a complete meal.
- Feel free to adjust the sweetness by adding more or less brown sugar based on your preference.
