Ingredients

  • 2 cups grilled or shredded chicken breast
  • 4 flour tortillas
  • 1 can black beans
  • 1 cup cheddar cheese, shredded
  • 1 cup salsa
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup lettuce, shredded
  • 1 sliced avocado or guacamole
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 2 tablespoons olive oil

Instructions

  1. Start by marinating your chicken in a mix of lime juice, cumin, chili powder, garlic powder, and salt. Let it sit for about 30 minutes to absorb the flavors.
  2. Grill the marinated chicken over medium-high heat for about 6-7 minutes per side, or until fully cooked. If you don’t have a grill, you can pan-sear it in a skillet. Once cooked, let it rest for a few minutes before slicing or shredding.
  3. While the chicken is cooking, slice your bell peppers and onions. You can sauté them in a little olive oil for added flavor, or leave them raw for a crunchy texture.
  4. Heat the tortillas slightly in a microwave or on a skillet to make them more pliable. This helps prevent tearing when you wrap them.
  5. Lay a tortilla flat and start layering your ingredients. Begin with a generous scoop of shredded chicken, then add black beans, sautéed vegetables, cheese, avocado, and a dollop of salsa.
  6. Fold in the sides of the tortilla and then roll it tightly from the bottom up. Secure with a toothpick if needed.
  7. Cut the wrap in half diagonally and serve immediately with extra salsa or chips on the side.
