Description
A vibrant and refreshing salad made with rainbow carrots and a delicious sesame dressing.
Ingredients

- 1 1/2 lbs (680g) rainbow carrots
- 1/4 cup scallions
- 2 tbsp cilantro
- 2 tbsp basil
- 1 1/2 tbsp sesame seeds
- 3 tbsp rice vinegar
- 2 tbsp sesame oil
- 1 1/2 tbsp low sodium Tamari (or soy sauce)
- 1 tbsp white miso
- 1 tsp sriracha
- 1 tsp coconut sugar
- 1 tsp minced garlic
- 1 tsp grated ginger
Instructions
- Toast sesame seeds in a pan over medium heat for 5-7 minutes until fragrant.
- Wash and peel the carrots; julienne them into thin strips.
- In a large bowl, combine julienned carrots with chopped scallions, cilantro, and basil.
- Blend dressing ingredients until smooth; pour over carrot mixture and toss well.
- Chill for at least an hour before serving to allow flavors to meld.
Notes
- This salad can be made a day in advance and stored in the refrigerator.
- Feel free to add other vegetables for added crunch.
