- 1 pound Sausage (optional: chicken sausage or plant-based options)
- 2 medium Sweet Potatoes, peeled and cubed
- 1/4 cup Honey (or maple syrup for vegan option)
- 3 cloves Garlic, minced
- 2 tablespoons Soy Sauce (tamari for gluten-free)
- 2 tablespoons Olive Oil (or any neutral oil)
- 1 teaspoon Paprika (adjust to taste)
- Salt and Pepper, to taste
- 1/4 cup Fresh Parsley, chopped (for garnish)
Instructions
- Peel and cube the sweet potatoes into uniform pieces, about 1-inch cubes. Mince the garlic and gather all ingredients.
- In a large skillet, heat olive oil over medium heat for about 2 minutes. Add sausage and cook for 5-7 minutes until browned.
- Stir in cubed sweet potatoes and cook for another 5 minutes until they begin softening.
- In a bowl, whisk together honey, minced garlic, soy sauce, paprika, and season with salt and pepper. Pour sauce over the mixture.
- Cover the skillet and reduce heat to low. Simmer for about 10 minutes until sweet potatoes are tender.
- Remove from heat and garnish with fresh parsley. Serve hot.

- This dish can be made vegan by using plant-based sausage and maple syrup.
