Description

A delicious and easy recipe for Mini Baked Chicken Tacos that everyone will enjoy!


Ingredients

  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 12 mini soft tortillas
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded lettuce
  • ½ cup sour cream (optional)
  • ½ cup salsa (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the ground chicken to the skillet. Cook until browned, breaking it up with a spatula.
  5. Stir in the taco seasoning and cook for another 2-3 minutes until the chicken is well coated.
  6. While the chicken cooks, warm the mini tortillas in a separate pan or microwave for easier folding.
  7. In each tortilla, add a spoonful of the chicken mixture, followed by a sprinkle of shredded cheese.
  8. Place the assembled tacos on a baking sheet and bake for 10-15 minutes until the tortillas are crispy and the cheese is melted.
  9. Once out of the oven, top each taco with diced tomatoes, shredded lettuce, and any other desired toppings.
  10. Garnish with fresh cilantro, and serve with sour cream and salsa on the side.
