A delicious and easy recipe for Mini Baked Chicken Tacos that everyone will enjoy!

- 1 pound ground chicken
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 12 mini soft tortillas
- 1 cup diced tomatoes (fresh or canned)
- 1 cup shredded lettuce
- ½ cup sour cream (optional)
- ½ cup salsa (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the ground chicken to the skillet. Cook until browned, breaking it up with a spatula.
- Stir in the taco seasoning and cook for another 2-3 minutes until the chicken is well coated.
- While the chicken cooks, warm the mini tortillas in a separate pan or microwave for easier folding.
- In each tortilla, add a spoonful of the chicken mixture, followed by a sprinkle of shredded cheese.
- Place the assembled tacos on a baking sheet and bake for 10-15 minutes until the tortillas are crispy and the cheese is melted.
- Once out of the oven, top each taco with diced tomatoes, shredded lettuce, and any other desired toppings.
- Garnish with fresh cilantro, and serve with sour cream and salsa on the side.
