Description

A delicious and creamy chicken pasta dish made with rotini, melted cheeses, and a rich sauce.


Ingredients

  • 2 cups cooked chicken
  • 8 oz rotini pasta
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add rotini pasta and cook until just al dente. Drain and set aside.
  2. In a large skillet, melt butter over medium heat. Add minced garlic and cook for about 1 minute until fragrant.
  3. Stir in flour and whisk to create a roux, cooking for another 1–2 minutes.
  4. Gradually whisk in chicken broth and milk, stirring constantly to avoid lumps. Cook until the sauce begins to thicken, about 3–5 minutes.
  5. Stir in the cooked chicken, Parmesan, and mozzarella. Mix until cheeses are fully melted and the sauce is smooth.
  6. Add the cooked pasta into the skillet, tossing to coat evenly in the sauce.
  7. Season with salt and black pepper. Sprinkle with chopped parsley if desired before serving.

Notes

  • For a thicker sauce, let it simmer longer before adding the cheeses.
