Description

Delicious and healthy ground chicken taco bowls topped with fresh vegetables and avocado.


Ingredients

  • 1 lb lean ground chicken
  • 1 cup chopped bell peppers (red, yellow, green)
  • 1 medium yellow onion, chopped
  • 2 tsp taco seasoning
  • Juice of 1 lime
  • 1 cup cooked rice or quinoa
  • ¼ cup fresh cilantro, chopped
  • ½ avocado (sliced)
  • ¼ cup shredded cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers until softened (about 5 minutes).
  2. Push veggies aside and add ground chicken. Cook until browned (7-10 minutes), breaking it apart as it cooks.
  3. Add taco seasoning and lime juice; stir well and cook for an additional 2-3 minutes.
  4. Prepare rice or quinoa according to package instructions.
  5. Assemble the bowls by adding a scoop of rice or quinoa topped with the chicken mixture.
  6. Garnish with fresh cilantro and desired toppings. Enjoy warm!
