- 1 ½ lbs baby potatoes, halved
- 1 lb ground beef
- 3 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1 teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Prep the Potatoes: Start by washing and halving your baby potatoes. If they’re on the larger side, quarter them for even cooking. You want them bite-sized and ready to soak up all that garlic butter flavor.
- Sear the Potatoes: Heat 1 tablespoon of butter in a large skillet over medium heat. Once melted, add the potatoes cut side down. Let them cook undisturbed for 5–7 minutes to develop a crispy, golden crust, then stir and cook for another 5 minutes until fork-tender. Season lightly with salt and pepper, then remove and set aside.
- Brown the Beef: In the same skillet, add the ground beef. Break it up with a spatula and cook until browned and no longer pink, about 6–8 minutes. Drain any excess fat, leaving just a little for flavor.
- Add the Garlic and Seasonings: Push the beef to one side of the pan. Add the remaining 2 tablespoons of butter to the empty space. Once melted, toss in the minced garlic. Stir and let it sizzle until fragrant — about 30 seconds. Mix it into the beef, then sprinkle in the paprika, onion powder, thyme, salt, and pepper. Stir well to coat the meat in that garlic butter goodness.
- Combine and Finish: Return the potatoes to the skillet and gently mix everything together. Let it cook for another 2–3 minutes so all the flavors marry together. Sprinkle with fresh parsley if you like, and serve hot.

- For extra flavor, feel free to add other herbs like rosemary or oregano.
