Description

A refreshing appetizer combining sweet pickled peaches, savory prosciutto, and fresh mozzarella.


Ingredients

  • 1 jar (16 oz) pickled peaches, sliced into wedges
  • 1/4 lb thinly sliced prosciutto
  • 8 oz fresh mozzarella pearls (ciliegine)
  • 1 bunch fresh basil leaves
  • Small bamboo skewers or decorative picks

Instructions

  1. Drain the mozzarella pearls and pickled peach slices. Pat them dry thoroughly with paper towels.
  2. Take a slice of prosciutto and fold it back and forth into a ribbon shape.
  3. Thread a mozzarella pearl onto the skewer first.
  4. Follow with the ribboned prosciutto.
  5. Add a slice of pickled peach and finish with a fresh basil leaf.
  6. Arrange on a serving platter and serve immediately or chill for up to 2 hours.

Notes

  • These skewers are best served fresh but can be chilled for a short period.
  • You can substitute prosciutto with any other cured meat.
