Key Ingredients for Easy Chicken Noodle Soup

Crafting a bowl of easy chicken noodle soup is like wrapping yourself in a warm blanket on a chilly day. The right ingredients can elevate this classic dish into a comforting meal that feels like home.

  • Chicken: I prefer using bone-in, skin-on chicken thighs for their rich flavor and tenderness. If you’re short on time, rotisserie chicken works wonders too. Just shred it and add it to the simmering broth for an instant flavor boost.

  • Noodles: I recommend egg noodles for their hearty texture and quick cooking time. They absorb the broth beautifully and are a staple in many chicken noodle soup recipes. Just keep an eye on them to prevent overcooking!

  • Vegetables: Carrots, celery, and onions form the aromatic base of the soup. I sauté these veggies at the start to release their natural sweetness, which creates a lovely depth of flavor.

  • Broth: Good quality chicken broth is essential for a rich taste. You can use homemade broth or store-bought varieties for convenience. Low-sodium options allow you to control the saltiness.

  • Herbs: Fresh parsley at the end brightens the dish. Thyme is also a great addition for that classic herbal note. Use generously to make your soup both tasty and aromatic.

With these basic components, you’ll have a delightful easy chicken noodle soup that warms both heart and soul.

Cooking Tips and Notes for Easy Chicken Noodle Soup

Creating a bowl of easy chicken noodle soup is not just about tossing ingredients into a pot; it’s about mastering the art of balance and flavor. As someone who often craves a warm, comforting soup on chilly days, I’ve learned a few best practices that can elevate your dish from good to great.

Best Practices for Perfecting Your Soup

  • Choose the Right Chicken: Rotisserie chicken is a fantastic shortcut. Its flavors are already well-developed, and it saves time. However, if you prefer a home-cooked taste, poaching chicken breasts or thighs in broth can provide excellent results.

  • Layer Your Flavors: Start by sautéing onions, garlic, and celery in a little olive oil. This step adds depth to your easy chicken noodle soup. Don’t rush—let them soften until aromatic and slightly caramelized.

  • Stock Up on Broth: Homemade broth is ideal, but store-bought can work just as well—look for low-sodium options for better control over salt levels. If you have leftover bones from your chicken, simmering them can produce an even richer broth.

  • Vegetable Variations: While carrots and celery are traditional, don’t hesitate to add other vegetables like spinach or peas. They not only enhance the color but also boost nutritional value.

  • Perfect Noodles: Add your noodles later in the cooking process to prevent them from becoming mushy. Cooking them separately and adding them just before serving is another good option.

With these simple tips, your easy chicken noodle soup will surely warm hearts and bellies alike!

A classic homemade chicken noodle soup that’s perfect for cold days!

Ingredients

Scale
  • 2 (32 ounce) cartons chicken stock
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 pound boneless chicken (breast, thighs or tenderloins)
  • 1 cup finely diced carrots
  • 1/2 cup finely diced celery
  • 10 ounce can cream of chicken soup
  • 3 cups water
  • 3 cups egg noodles, uncooked
  • salt and pepper, to taste

Instructions

  1. In a large stock pot, pour in 2 (32 ounce) cartons chicken stock, 1/2 teaspoon poultry seasoning, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder and 1 pound boneless chicken. Give it all a good stir.
  2. Cover and cook on medium to medium-high heat for about 20-25 minutes (or until chicken is cooked through).
  3. Once chicken is cooked, using tongs, take chicken out of pot and shred it or cut it up using two forks (be careful, the chicken will be very hot).
  4. Put the shredded chicken back into the stock pot.
  5. Then add 1 cup finely diced carrots, 1/2 cup finely diced celery and 10 ounce can cream of chicken soup and stir well.
  6. Add 3 cups water and 3 cups egg noodles, uncooked and stir again.
  7. Cover and cook on medium heat for about 15-20 more minutes until veggies are tender and noodles are soft.
  8. Give it a taste test. I usually find I need to add salt and pepper. I usually add a couple teaspoons of salt and a teaspoon of fresh black pepper (but this is up to your tastes, etc.)
  9. Then serve!
