Description

A delicious creamy spinach pasta perfect for a quick dinner.


Ingredients

Scale
  • 2 cups fresh spinach
  • 8 oz pasta (fettuccine or penne)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Juice of 1/2 lemon

Instructions

  1. Boil salted water and cook pasta according to package instructions until al dente (8-10 minutes). Drain, reserving some pasta water.
  2. In a pan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Toss in the fresh spinach and cook until wilted (about 3-4 minutes).
  4. Pour in heavy cream, simmer for about 5 minutes until slightly thickened. Stir in Parmesan cheese until melted and smooth.
  5. Mix cooked pasta with the creamy spinach sauce, adding reserved pasta water for desired consistency.
  6. Squeeze lemon juice over the dish, season with salt and pepper before serving hot.
