- 2 large navel oranges, segmented
- 3 tbsp honey
- ½ cup pecans or walnuts, chopped
- ¼ cup fresh mint leaves, torn
- ¼ cup freshly squeezed orange juice
Instructions
- Rinse cranberries under cold water until clean and set aside.
- Peel the oranges and segment them into bite-sized pieces.
- In a large bowl, combine cranberries, orange segments, and chopped nuts.
- Drizzle honey and orange juice over the mixture; stir gently until coated.
- Add torn mint leaves and toss lightly.
- Chill in the refrigerator for at least 30 minutes before serving to meld flavors.
Notes
- This salad can be made a few hours in advance for the best flavor.
