A festive peppermint chocolate meringue wreath perfect for holiday celebrations.

- 6 large egg whites
- 1 ½ cups granulated sugar
- 2 teaspoons cornstarch
- 1 teaspoon white vinegar
- 3 tablespoons unsweetened cocoa powder
- ½ teaspoon peppermint extract
- 1 ½ cups heavy whipping cream
- 2 tablespoons powdered sugar
- ⅓ cup crushed peppermint candies
- ½ cup dark or semi-sweet chocolate, melted
- ½ cup fresh berries or pomegranate arils (optional)
Instructions
- Preheat oven to 250°F (120°C) and line a baking sheet with parchment. Draw a 9-inch circle and a 5-inch inner circle to shape the wreath.
- In a clean bowl, beat egg whites on medium until soft peaks form.
- Gradually add granulated sugar and beat on high until glossy, stiff peaks form.
- Sift in cocoa powder, then gently fold in cornstarch, vinegar, and peppermint extract.
- Spoon meringue onto parchment in a wreath shape. Smooth the top and shape swoops.
- Bake for 90 minutes, then turn off oven and cool inside for 1 hour without opening the door.
- Whip cream with powdered sugar until soft peaks form.
- Spread whipped cream over cooled meringue.
- Sprinkle with crushed peppermint and fresh berries or pomegranate.
- Drizzle melted chocolate on top and serve immediately.
Notes
- This wreath can be made a day ahead but is best served fresh.
- Store in a cool, dry place to maintain its texture.
