Description

Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup buffalo sauce
  • 1 cup shredded blue cheese or sharp cheddar
  • 12 egg roll wrappers
  • 2 green onions (sliced)
  • 2 cups oil for frying (approximately)
  • 1 cup sour cream (for serving, optional)

Instructions

  1. Cook chicken breasts by boiling or grilling until fully cooked. Allow to cool before shredding.
  2. In a bowl, combine shredded chicken, buffalo sauce, and cheese; mix well.
  3. Place an egg roll wrapper on a flat surface. Spoon filling into the center, fold the sides over, and roll tightly from bottom to top.
  4. Heat oil in a deep skillet over medium heat. Fry egg rolls until golden brown and crispy.
  5. Transfer cooked rolls to paper towels to drain excess oil. Serve hot with sour cream or extra buffalo sauce.
