Delicious buffalo chicken egg rolls that are perfect for a snack or appetizer.

- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup buffalo sauce
- 1 cup shredded blue cheese or sharp cheddar
- 12 egg roll wrappers
- 2 green onions (sliced)
- 2 cups oil for frying (approximately)
- 1 cup sour cream (for serving, optional)
Instructions
- Cook chicken breasts by boiling or grilling until fully cooked. Allow to cool before shredding.
- In a bowl, combine shredded chicken, buffalo sauce, and cheese; mix well.
- Place an egg roll wrapper on a flat surface. Spoon filling into the center, fold the sides over, and roll tightly from bottom to top.
- Heat oil in a deep skillet over medium heat. Fry egg rolls until golden brown and crispy.
- Transfer cooked rolls to paper towels to drain excess oil. Serve hot with sour cream or extra buffalo sauce.
