Description

Delicious homemade blueberry biscuits topped with a sweet glaze.


Ingredients

  • ¼ cup unsalted butter
  • 2 cups all-purpose flour
  • 3 Tbsp sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1½ cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • 1 cup powdered sugar
  • 2 Tbsp milk

Instructions

  1. Heat the oven to 450°F. Cut the butter into pieces and place them in a 9 or 8-inch square microwave-safe baking dish. Put the dish in the microwave and melt the butter.
  2. Whisk together the dry ingredients in a medium bowl – all-purpose flour, sugar, baking powder, and salt.
  3. Pour in buttermilk into the bowl and stir until a loose dough forms. Gently fold in blueberries.
  4. Press the biscuit dough in the pan over the melted butter with a spatula or your hands.
  5. Using a knife, cut the biscuits into 9 squares.
  6. Bake for 20-25 minutes until golden.
  7. In a small bowl, whisk together powdered sugar and milk. Pour the glaze over the biscuits and enjoy!

Notes

  • This recipe can be easily doubled for a larger gathering.
  • Try adding lemon zest to the dough for extra flavor.
