Delicious stuffed bell peppers filled with macaroni, ground meat, and cheese.

- 4 large bell peppers (red, yellow, or green)
- 1 cup elbow macaroni
- 1 lb ground beef or turkey (lean)
- 1 can (15 oz) chili beans (mild)
- 1 can (14 oz) diced tomatoes
- 1 ½ cups shredded cheddar cheese (divided)
- 1 tsp cumin
- 1 tsp chili powder
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 2 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat; sauté onions and garlic until translucent.
- Cook macaroni according to package instructions; drain.
- In a bowl, mix cooked macaroni, ground meat, chili beans, diced tomatoes, spices, and half the cheese until combined.
- Halve the bell peppers lengthwise and remove seeds; fill each pepper with the mixture.
- Place stuffed peppers in a baking dish, top with remaining cheese, cover with foil, and bake for 25 minutes.
- Remove foil and bake for an additional 10 minutes until bubbly and golden.

- Consider adding more spices or ingredients such as corn or black olives for variation.
